Banana loaf cake, Victoria sponge cake and Easter chocolate cupcakes topped with chocolate buttercream or melted chocolate and Cadbury mini eggs.
My mum and dad are visiting me and staying in a house nearby. My dad had gone out for a bike ride so me and my mum decided to make the most of the day and bake, and wow did we bake a lot.
Firstly, we made a banana loaf cake. This must be the thing I have made the most as my mum loves it. I never have it when I make it as it’s not my favourite thing, but it does taste nice. To be fair it tastes exactly like you would expect, banana and cake. I’m not the biggest fan of banana so maybe that is why I don’t like it too much, but the cake element makes it nice. My mum always wants to add more bananas than the recipe calls for because she wants it to taste a lot like banana rather than subtle. The way that this is cooked, as a loaf, makes it so easy to cut and the presentation really does not matter with it, which is great!
The next thing we made was a Victoria sponge cake. If you look at the image, you can probably see quite a difference between the bake in the top and bottom sponge. This is because this was the first time I used the Wilton bake even strips. I wanted to use it on one sponge and not the other so I could see the difference it made (plus the fact that this cake wasn’t going out for anyone to see so the look of it didn’t matter too much, it was more for experimental reasons I did it). It definitely made a difference with the bake and the sponge that I used the strip on was much more moist and baked evenly. Though I wouldn’t use them on a Victoria sponge cake again as they’re not covered by buttercream on the sides so it makes the sponges more crumbly and harder to handle.
Finally, we made Easter cupcakes. They’re very simple, just chocolate cupcakes topped with chocolate buttercream and Cadbury mini eggs, to resemble a nest. We did also make a few without buttercream. My boyfriend isn’t a huge fan of buttercream, which I just find shocking because it’s so good, so we thought of making some with melted chocolate on top with mini eggs. I thought they would be drier than the others because buttercream is where you get the most moisture from in a cake, but he said they were great and exactly what he liked. I wanted to try one myself to see actually what they were like in comparison to a normal buttercream one, but they were gone so quick I didn’t get a chance!
