Galaxy Chocolate Chip Cookies

Soft and thick chocolate cookies, filled with chopped up Galaxy chocolate chunks.

Truth be told, I have never made cookies before (or at least to my knowledge) because whenever I have gone to choosing what to bake, there has always been something better or something I’ve wanted more. So I feel like cookies have been neglected by me for too long now. I recently started a new job and wanted to take something in that I had baked for everyone, and because I take the bus to get there, I thought cookies would be the easiest to take in.


I have always loved cookies, but truthfully, I am more of a cake girl, hence why I probably gravitate towards making cake over anything else. My favourite cookie has to be chocolate chip as I love chocolate and they are the best warmed up and eaten. So when I came across this galaxy chocolate cookie recipe, there was no doubt I wanted to try it as I love a chocolate cookie and galaxy chocolate is so good.

Making these cookies couldn’t be any easier, which I’m sure is the same for most cookies. Everything goes into one bowl, is mixed together and scooped out onto trays to go in the oven. With these I made my first batch as big cookies and the second batch as regular size ones, just to have a mix and also see what the difference would be. I weighed mine out so that they were roughly the same size. One thing people tend to get wrong with making cookies is they flatten them down on the tray before baking, which you shouldn’t do, you should put them as balls (or close enough to) because cookies spread out as they cook in the oven. These cookies were supposed to be thicker than an average cookie so when they came out they looked a little thicker than I wanted them to look, so I did use a tin to flatten them down slightly and made them look nicer! I also had one warm out of the oven and the chocolate was melted inside and tasted like heaven. But having cookies that are thicker makes them gooey and soft in the middle rather than crisp, which I think is how a cookie should be.
