Rainbow Cake

Light vanilla rainbow cake layers filled and topped with vanilla buttercream.

This cake took me a few attempts to get it right, and to be honest I still haven’t got it completely right, so I will be trying it out more and more until it’s perfect! But considering what my first attempt looked like compared to this final attempt, I am so happy with how it has progressed.


The first time I made it, I only did four colour layers (the same as I did with my rainbow cupcakes), so it technically wasn’t fully rainbow. I only did four because I didn’t want to make it too complicated on my first attempt with too many colours and mess the whole thing up. But then when I did finally do it with six colours, it looked so much better, and actually looked like a rainbow!

It is one of the harder cakes to make, as you have to evenly separate the cake mix into several bowls and add food colouring to them until you get the colours right. Then you have to bake them all (which if you don’t have enough oven room for six cake tins, takes a while). Then, you have to remember to get the colours in the right order, because there’s nothing worse than doing all the hard work of making the sponges and then you put them in the wrong order!


After all that hard work is complete, you and there's a layer of buttercream between all the sponges and round the cake, you’re all good. As you can see, I’m not the best with the outer-buttercream decorating and smoothing yet, but, in my defence:


1) I don’t have the right tools (that I so wish I had) to smooth, scrape and decorate.


2) When making the cake I was concentrating more on the colours and inside of the cake rather than what the outside looked like. So even though the outside didn't look amazing, it was such a relief to cut into it and see each layer looking amazing and then the outside didn't matter any more!

Overall, this is definitely one of my favourite cakes to make as it is so aesthetically pleasing. Despite it being quite difficult to make, I really do think it pays off in the end when you get to finally cut into it and see how the rainbow has come out. (Though the only thing that slightly annoys me about this one is that I made the yellow layer a tiny bit thicker than the others, but who cares when it tastes hella good!)
