Light vanilla buttercream and homemade raspberry jam, sandwiched between two whirl biscuits and dusted with icing sugar.
Viennese Whirls… I have somewhat come to hate making them! I got a baking book (The Great British Bake Off) for Christmas last year and as soon as I saw that they had Viennese Whirls in there, I was dying to make them. I made them when I was visiting home and they were difficult, but they were great. Then my mum asked if I could make some for her work colleagues and the next thing I knew I was making 30 whirls (60 biscuits), and not long after I was doing it all again because they liked them so much. So, the fact that I drove myself crazy swirling 120 biscuits and swapping baking trays in the oven over and over, has somewhat made me resent ever making them in the first place!
Now, besides that, they taste VERY good and I can see why my mum requested them for work. But for that simple two biscuits, jam and cream, it’s a hell of a lot of work. My biggest difficulty was the swirling of the biscuits on the tray, for some reason my biscuits didn’t have such a nice height to them and they were rather flat. However, when they were sandwiched together at the end they didn’t seem too bad.
This was also my first attempt at making jam, raspberry jam in this case. When it set, I tried some, and honestly I’ve never tasted such a sweet and fruity jam. I love jam, and have never tasted a homemade one before, but after this I have no idea what they do to jarred jam because it doesn’t taste anything as fruity as the one I made. The only ingredients in the one I made were raspberries and jam sugar, which is what the recipe called for. My only thing about jam is I prefer seedless, so when making my own I wasn’t too sure on removing the seeds, and when attempting to sieve out the seeds it seemed to take away all of the thickness to the jam and was just a liquid so it wouldn’t have set.
I have to say, they may have been quite difficult, well, more time consuming than difficult really, but they hands down beat the packaged Viennese Whirls you buy at the supermarket. The fresh biscuit, buttercream and fruity jam (not to mention they were quite a bit bigger), it’s no competition.
